Ingredients
- 16 baby bok choys
- 12 cups shiitake mushrooms
- ⅓ cup sesame oil
- 2 ½ tbsp minced garlic
- ½ tsp red pepper flakes
- 1 ½ tbsp minced ginger
- 1 ½ lbs shrimp
- 1 cup vegetable broth
- 2 tbsp rice vinegar
- 2 ½ tbsp sesame seeds

Step 1
Cut baby bok choy into 1/2 inch slices from top to bottom, keeping the green leaves and white stalks separate. Thinly slice shiitake mushrooms.

Step 2
In a skillet over medium-high heat, add sesame oil. Add shiitake mushrooms and white baby bok choy stalks and cook without stirring 2 to 3 minutes, until bottoms begin to brown. Stir and continue cooking until mushrooms are tender, 3 to 4 minutes more. Season with a pinch of salt and pepper.

Add garlic, red pepper flakes, ginger and baby bok choy leaves to skillet: cook and stir until fragrant, about 1 minute.

Step 4
Add shrimp, broth and rice vinegar and cook until shrimp are pink and firm and liquid is mostly evaporated, about 5 minutes. Season with salt and pepper to taste.
