- 1 cup brown rice (dry)
- 1 jalapeno pepper
- 1 ⅔ limes
- 3 ½ tbsp fresh cilantro
- 1 cup pineapple chunks
- 2 avocados
- 12 oz rotisserie chicken
- 1 cup arugula

Step 1
Prepare rice according to package instructions.

De-seed and mince jalapeno pepper. Juice lime. Coarsely chop cilantro. Dice pineapple into small pieces.

Peel avocado and place in a bowl. Add jalapeno pepper, cilantro and 8 tsp lime juice. Stir together and season with salt to taste.
