Ingredients
- 5 cups brussels sprouts
- 2 sweet potatoes
- ¾ cup fresh cilantro
- 1 jalapeno pepper
- 2 tsp minced garlic
- 1 ½ tbsp tomato paste
- 1 ½ tbsp red wine vinegar
- ½ tsp paprika
- ¼ cup olive oil
- 1 ½ lbs flank steak (6 oz, 6 oz, 6 oz, 6 oz portions)

Step 1
Preheat oven to 450 degrees F. Cut brussels sprouts in half. Cut sweet potato into 1-inch pieces.

In a blender or food processor, combine cilantro, jalapeno pepper (de-seeded), garlic, tomato paste, red wine vinegar, paprika and 2 tbsp olive oil. Puree until smooth.

Step 3
Heat remaining 2 tbsp olive oil in an oven-safe skillet over medium-high. Add brussels sprouts, sweet potato, salt and pepper. Cook 15 minutes, stirring regularly, until softened. Transfer to a plate.

Season flank steak with salt and pepper. Add to the empty skillet and sear 1 minute per side, until browned. Top steak with half the cilantro sauce, then return vegetables to the pan around the steak. Transfer to the oven and cook 8 to 10 minutes, or until steak is done to your preference.
