Ingredients
- 3 shallots
- 6 lemons
- 6 red bell peppers
- 3 yellow onions
- 3 lbs baby red potatoes
- ¾ cup olive oil
- 12 chicken thighs
- ⅓ cup balsamic vinegar
- 2 tbsp dried oregano
- 3 tbsp smoked paprika
- 3 tbsp minced garlic
- 1 ½ cups sun-dried tomatoes
- 1 cup kalamata olives
- ⅓ cup pine nuts
- ¾ cup feta

Step 1
Preheat oven to 425 degrees F. Finely chop shallots. Juice and zest 3 lemon, cut the other lemon into quarters and set aside. Slice red bell pepper and onion (roughly 1/2 inch thick). Cut baby red potatoes in half if very large (should be bite sized).

In a bowl, combine 6 tbsp olive oil, the chicken thighs, 3 tbsp lemon zest, 12 tbsp lemon juice, the balsamic, dried oregano, smoked paprika, shallots, garlic, and a generous pinch of salt and pepper. Toss well to combine.

On a rimmed baking sheet, toss baby red potatoes with remaining 6 tbsp olive oil. Season with salt and pepper. Scatter lemon quarters among potatoes and place in the oven: roast 20 minutes, until potatoes are almost tender.

Step 4
Remove baking sheet from oven and nestle chicken thighs around potatoes. Spread red bell pepper and onion around chicken and season with another pinch of salt and pepper. Return to the oven 20 to 25 minutes, until chicken is cooked through.

Meanwhile, in a bowl combine sun-dried tomatoes (with any oil or liquid), olives, pine nuts (optional), and feta (optional). Toss until well combined.

Step 6
Scatter sun-dried tomatoes mixture over chicken thigh immediately after removing from the oven. Let stand 5 minutes before serving. Enjoy!
