Step 1
Crack egg into a large mixing bowl and beat with a fork until smooth. Thinly slice green onion. Add to the mixing bowl.

Grate zucchini on the large holes of a box grater, then use a paper towel to squeeze out the moisture. Transfer to the mixing bowl.

Add pre-cooked quinoa, cottage cheese, shredded cheddar, flour, cumin, garlic powder and a few pinches salt and pepper. Stir to combine, then form into 2 patties per person.

Step 4
Heat 2 tbsp olive oil over medium heat in a heavy skillet. Once it starts to glisten, place patties into the pan. Cook 3 minutes until browned and slightly crisp. Gently flip and cook 2 minutes more on the other side. Transfer to a plate.

While patties cook, combine avocado, 4 tsp lime juice, and a pinch of salt in a blender or food processor and process until smooth. Add water 1 tsp at a time to reach a pourable consistency. Season well with salt and pepper to taste.

When patties are done, heat remaining 2 tbsp olive oil over medium heat in the empty skillet. Gently sautee spinach until wilted. Remove from heat.

Divide spinach onto plates and top with quinoa burgers. Scoop a dollop of avocado dressing onto each burger and serve.

Pre-cooked quinoa is available at some grocery salad bars. If you're preparing dry quinoa, combine it in a saucepan with twice as much water. Bring to a boil, then reduce heat to a simmer and cover. Cook 15 min, or until liquid is absorbed. Fluff with a fork. Quinoa can be made ahead and stored in the fridge.
