- 4 sprays cooking spray
- 1 ½ lbs pork chops (6 oz, 6 oz, 6 oz, 6 oz portions)
- 1 ½ lbs green beans
- 4 cups cherry tomatoes
- 3 ½ tbsp butter
- ½ cup fresh basil
- 4 whole grain rolls

Step 1
Heat a heavy skillet over medium-heat and spray with cooking spray. Pat pork chops dry and season with salt and pepper. Add to the pan and cook 3 minutes per side, or until center registers 145 degrees F. Transfer to a cutting board and tent with foil.

Step 2
While pork cooks, trim ends off green beans. Add to the empty skillet and season with salt and pepper. Cook 5 minutes, until lightly browned. Transfer to a plate. Add cherry tomatoes and cook 3 minutes, until beginning to burst. Transfer to the same plate.

Step 3
Melt butter in the empty skillet over medium heat. Add basil and stir to infuse, 1 minute.

Divide pork, beans and tomatoes onto plates. Top with basil butter and enjoy with a roll.
