Pumpkin and noodles may not immediately register as a tasty combination of ingredients, but I urge you to give this pasta dish a chance. Pumpkin has several health benefits, such as improving your skin health and decreasing high blood pressure.
If you’re not a pumpkin superfan (I know I’m not), don’t worry: It’s not the only flavor in this recipe.
This vegetarian dish contains a surprising depth of flavor from the dried sage, garlic, and cayenne pepper.
While there is a lift of protein from the crushed almonds, if you’re looking for more, shredded rotisserie chicken is an easy add. Frozen spinach is totally OK here too — just make sure you add it to your skillet before the pumpkin. And don’t feel like you have to use linguine — any pasta shape will work! |
