Between the pumpkin bread, creamy soups, and endless variations of roasted squash, it’s easy to forget about fall salads! But personally, they’re one of the things I look forward to most this time of year.
This apple, cabbage, and prosciutto salad is crunchy, tangy, a little sweet, and just salty enough. I hope you enjoy it!

Prosciutto, apple, and cabbage salad
|
Crisp green apples, crunchy cabbage, buttery pecans, and savory prosciutto — who says salads can’t be cozy?
If this medley of flavors and textures doesn’t do it for you, perhaps the health perks will!
Hot take: Cabbage is underrated when it comes to nutritional value. This humble cruciferous veggie delivers vitamin C, vitamin K, and a whole lot of fiber. Apples are famous for keeping the doctor away for a reason: They're a great source of fiber, including pectin, a type of soluble fiber that can help support a healthy gut microbiome. Then there are the pecans, which add heart-healthy fats. The classic autumnal nut contains mostly unsaturated fats, along with antioxidants and minerals like manganese.
Lastly, let’s talk about prosciutto. The majority of the 26 grams of protein delivered in each serving comes from this cured Italian meat. But if you’re keeping an eye on sodium intake, consider halving the amount suggested in the recipe.
No cooking required. Just chop, toss, whisk, and you're done.
